- 1 lb. Green beans, snapped to 2" lengths
- 1 lb. Hypomyces lactifluorum (Lobster Mushroom), cleaned & cut into 1/4" x 1/4" x 2" sticks
- 2 T. extra virgin olive oil
- 1 medium shallot, minced
- 1/2 t. dried marjoram
- 1/4 C. dry sherry
- 1/4 C. chicken or vegetable stock
- 1/8 C. hazelnuts, roasted, skinned & chopped
- salt & pepper
Methods/steps
- Saute green beans in butter over medium high heat for 1 minute.
- Add mushrooms & saute for 1 minute.
- Add shallot & marjoram, saute 1 minute.
- Add sherry & stock, reduce over high heat until thickened, 2-3 minutes.
- Add hazelnuts, salt & pepper to taste.
- Simmer 1-2 minutes to blend flavors.
Additional Tips
Serve with grilled chicken or fish, and polenta or risotto.
