- 8 oz. Dove sole fillets
- 4 oz. bay shrimp
- 4 oz. carrot, julienned
- 4 oz. sliced snow peas (or frozen petite peas, thawed)
- 4 oz. Matsutake buttons, sliced into matchsticks
- 2 green onions, chopped
- 1 T. fresh flat-leaf parsley, chopped
- 1 T. fresh tarragon, chopped
- 4 T. dry sherry
- butter
- salt and pepper
- foil
Methods/steps
- Make 4 12" squares of foil.
- Butter the center of each square.
- Add 1/4 of each ingredient to each square - fish, then shrimp, topped with vegetables, herbs, salt & pepper, then sherry.
- Fold over foil making a tight parcel, and cut a slit on top.
- Grill over medium coals or in 400F oven for 20 minutes.
