Puffball Chips

Fried goodness.

  • oil for deep frying
  • 1 lb. firm puffballs, skin removed if tough
  • salt
  1. Heat oil to 375F.
  2. Slice puffballs as thin as possible, or on a mandolin.
  3. Drop a small amount of slices at time into oil.
  4. Fry 2-3 minutes or until golden browned and curling.
  5. Remove with slotted spoon and drain on paper towels.
  6. Add salt to taste.
  7. Serve while warm.
Additional Tips

Also works well with sliced Agaricus or oyster mushrooms.
