"Lobster" & Green Beans

Description

The seafood-like flavor of Lobster Mushroom, with French flavorings and Chinese cooking. Pacific Northwest Fusion!

  • 1 lb. Green beans, snapped to 2" lengths
  • 1 lb. Hypomyces lactifluorum (Lobster Mushroom), cleaned & cut into 1/4" x 1/4" x 2" sticks
  • 2 T. extra virgin olive oil
  • 1 medium shallot, minced
  • 1/2 t. dried marjoram
  • 1/4 C. dry sherry
  • 1/4 C. chicken or vegetable stock
  • 1/8 C. hazelnuts, roasted, skinned & chopped
  • salt & pepper
Methods/steps
  1. Saute green beans in butter over medium high heat for 1 minute.
  2. Add mushrooms & saute for 1 minute.
  3. Add shallot & marjoram, saute 1 minute.
  4. Add sherry & stock, reduce over high heat until thickened, 2-3 minutes.
  5. Add hazelnuts, salt & pepper to taste.
  6. Simmer 1-2 minutes to blend flavors.
Additional Tips

Serve with grilled chicken or fish, and polenta or risotto.
