- 1/4 lb. butter (one cube/stick)
- 1 C. milk
- 1 t. salt
- 1 C. sifted flour
- 3 eggs
- 1/4 C. grated Gruyere
- 1/4 C. chanterelles, finely chopped and sauteed until in butter
Methods/steps
- Preheat oven to 425F.
- Bring butter, milk and salt to a strong simmer over medium heat in a pan.
- Immediately remove from heat and add all the flour.
- Put pan back over medium heat and stir thoroughly with wooden spoon for about 30 seconds, or until batter leaves side of pan. Continue to dry out batter for another 1-2 minutes, stirring frequently.
- Remove to a mixer bowl.
- Add eggs 1 at a time with the mixer on medium low until thoroughly incorporated.
- Briefly blend in Gruyere and chanterelles.
- Put batter into piping bag fitted with a round tip.
- Pipe immediately into golfball-size shapes, 2 inches apart onto parchment lined sheet pans.
- Cook for 10 minutes, then turn the oven down to 350F and bake for 10 more minutes or until golden brown.
- Once they are removed from the oven pierce with a paring knife immediately to release steam.
