Teriyaki Roast Cauliflower Mushroom

This is so @#$%^& good it should be illegal, and utterly simple! The fruity nutty mushroom goodness is paired with the sweet & salt spicy nutty umami sauce.

  • 8 oz. Sparassis radicata, without any of the thicker base blades.
  • 1 T. soy sauce
  • 1 T. honey
  • 1 t. fresh grated ginger
  • 1 T. vegetable oil
  • a few drops of toasted sesame oil
  1. Preheat oven to 350F.
  2. Whisk soy sauce, honey, ginger and oils together in a large mixing bowl.
  3. Tear mushroom into 1-2" shreds.
  4. Thoroughly coat the mushroom pieces in the sauce.
  5. Spread out on a baking sheet.
  6. Roast 30-45 minutes, until the frilly edges are crispy but not burned and the centers are still chewy.
  7. Let cool.
Additional Tips

Very intense rich flavors. A little bit goes a long ways. Serve as nibbles with a few other appetizers.
